How to freeze-dry fruit chews

Starburst and similar fruit chews puff into airy, crunchy clouds that melt on the tongue. Give them room, because they grow a lot.

Fruit chews like Starburst are one of the top sellers in freeze-dried candy. They puff into soft-looking, crunchy pillows that dissolve as you eat them, with a stronger fruit flavor than the original chew.

USDA lists original Starburst at about 9% water, 8% fat and 83% carbohydrate. Like other candy, they are not being preserved in the dryer. The vacuum makes trapped air and moisture expand while the warm shelf softens the candy, and the puffed shape sets as it cools.

They are more forgiving than hard candy and puff more dependably than gummies, which makes them a good second candy after Skittles. Results still vary with recipe changes and between flavors in the same pack.

Prep and loading

  1. Unwrap and place pieces whole, at least an inch apart. They expand in every direction.
  2. Use candy mode or a warm shelf setting per your manual. Do not pre-freeze.
  3. Watch the first batch so you learn how much yours grow.
  4. Bag as soon as the cycle ends and the pieces have cooled.

How to tell it’s dry

  • Pieces are puffed, light and crunchy all the way through.
  • No dense, chewy core when you break one open.

A steady weight only shows the drying has stopped; breaking the thickest piece is the check that counts. Neither is a safety test. Safety comes from tested prep, safe cooking temperatures where needed, complete drying and airtight packing. See what a kitchen scale can and cannot tell you.

Not sure? The weight check compares two weighings and the expected dry weight for fruit chews.

Problems and fixes

Pieces fused together

Too close. Space them farther apart; they need more room than you expect.

Collapsed and chewy

Shelf too warm or the cycle ended too soon. Adjust your candy settings and test a small tray.

Went soft in the bag

Moisture got in. Seal immediately and keep bags out of humid rooms.

Rehydrating and storing

Rehydrate: Not rehydrated.

Store: Sealed mylar or stand-up pouches. Candy keeps months once puffed, and texture fades faster in humid air.

Ways to use it

  • Selling at markets and online
  • Party favors
  • Snacks
